INGREDIENTS Serving : serves 1-2

For the batter:
Spinach quinoa flour- 1 cup
Mixed garlic herbs- ½ tbsp
Salt and pepper- As per taste
Water- 2 cups

For the filling:
Olive oil- 1 tbsp
Finely chopped onion- 1 whole
Sliced Mushroom- 200 gm
Cubed Cottage Cheese- 100 gm
Crushed Garlic- 2 to 3 cloves
Spinach- 1 bowl
Milk- ¼ cup
Salt and pepper- As per taste

NOTE

You have to be careful while cooking the crepes from both the sides and keep the flame medium to low so that it cooks perfectly without burning.

INSTRUCTIONS

  • Add spinach quinoa flour, garlic herbs, salt & pepper in a bowl.
  • Pour in some water to have a batter-like consistency.
  • Heat oil in a pan, add onion and garlic to it.
  • Saute for a minute and then add spinach and mushrooms.
  • Once they wilt, it’s time to add the cottage cheese and milk with some salt and pepper for seasoning.
  • To make the crepe, heat a non-stick frying pan over medium heat and grease with a little oil.
  • Then, pour a ladleful of the batter in the middle of the pan and spread the batter out to the edges.
  • Cook the crepe from both sides.
  • Now spread pesto sauce according to your taste on the cooked crepes and layer it with the filling.
  • Sprinkle some Parmesan and enjoy the crepes while they are still warm.
