In this pesto pasta recipe, we have used some healthy and fresh ingredients which elevate the taste and nutrition quotient of the dish. Below we have mentioned the ingredients you will be needing to start with the preparation of the recipe. 

  • Basil leaves – 10-15
  •  Garlic – 12 (8 whole and 4 finely chopped)
  • Walnuts – 10-15
  • Cashew – 10-12
  • Olive oil – 1 Cup
  • Salt – as per taste
  • Black pepper – 2 Teaspoon
  • Pasta – 2 Cups
  • Cherry tomato – 6 (cut in halves)
  • Broccoli – 4-5 (flowers)
  • Capsicum – 1 (chopped in squares)
  • Corn – 4 Tablespoons
  • Reserved pasta water – 1 Cup

NOTE

INSTRUCTIONS

In Indian households, all we know is making basic pasta made with a few veggies and masala. But eating the same version of pasta might be boring sometimes. It’s time to adopt making pasta in different styles. Here we have a delicious version of pesto pasta. This pesto pasta is an easy-to-make recipe with a bunch of veggies and herbs that satisfy one from per nutrition and taste point of view. Below we have mentioned the recipe instructions in detail for you to follow as a guide. 

  • To start with the recipe, take a blender, and add basil leaves, garlic, walnut, cashew, black pepper, salt, and olive oil. Blend all the ingredients well and keep them aside. 
  • On the other side, take  4 cups of water, olive oil and pasta, and boil it for  7-10 minutes. Strain the excess water and keep it aside. Preserve pasta water for later.
  • Heat a pan on a low-medium flame, add some olive oil, and allow it to heat. Add garlic, capsicum, corn, broccoli, and cherry tomato, and cook all the veggies for 2 minutes,
  • Add salt, pepper powder, blended pesto sauce, and reserved pasta water. Mix all the ingredients well. Cook for a couple of minutes.
  • Now add boiled pasta and mix well. Finally, pesto pasta recipe is ready to be served.
