Healthy Mixed Berry Loaf

INGREDIENTS Serving : serves 3-4

  • 1 cup Whole-wheat flour
  • 1/4 cup organic oil
  • 1/2 cup jaggery
  • A handful of berries
  • Chopped prunes
  • 1 tbsp baking powder
  • 1/2 tbsp baking soda
  • 1/4 cup milk
  • 1 tbsp vinegar
  • 1/4 cup curd
  • 1/4 cup orange juice
  • 1 tbsp orange zest



You can check if the loaf is fully bakes by inserting a skewer. If the skewer comes out clean, your loaf is ready to eat!


  1. Sift the dry ingredients, flour, baking powder and baking
    soda in a bowl.
  2. Add a handful of berries and prunes to the dry mixture and
    mix it well.
  3. Now add sugar into the mixture and mix it nicely.
  4. Take another small bowl and mix milk with vinegar.
  5. Keep the mixture aside.
  6. Now add oil, curd and the mixture of milk and vinegar to
    the dry mixture.
  7. Fold the mixture gently and add the orange zest followed
    by the orange juice.
  8. Shift the mixture in a greased tin and top it with
    some berries and prunes.
  9. Bake in a preheated oven at 180 degrees for 20-30 mins
    to bake this loaf.
  10. Bring it out and set aside to let the loaf cool down.
  11. Now sprinkle some powdered sugar on the top and decorate
    with more berries before serving.
