Italian Pasta Salad For Lunch

Pasta is everyone’s favorite nut why should you deal with the calories that comes with a regular pasta dish? That’s why we have got you healthy and delicious pasta salad. You can have this for lunch or for dinner and the best part is that it can be prepared in minutes. It’s crunchy, nutritious and full of flavors!

INGREDIENTS Serving : serves 2

  • Water- 2 and ½ cups
  • Salt- ½ tbsp
  • Sesame oil- 1 tbsp
  • Fusilli pasta- 1 cup
  • Mayonnaise- 3 tbsp
  • Sesame oil- ½ tbsp
  • Mixed herbs- 1 tbsp
  • Black pepper- ½ tbsp
  • Salt- ¼ tbsp
  • Garlic powder- ¼ tbsp
  • Sugar- ¼ tbsp
  • Lemon juice- ½ tbsp
  • Cherry tomatoes- 5-6
  • Sweet corn- ¼ cup
  • Medium onion- 2
  • Capsicum- 4 tbsp
  • Cucumber- 1/4 cup
  • Boiled chickpeas- ¼ cup

INSTRUCTIONS

  1. Boil 2 cups of water in cooking pan.
  2. Add ½ teaspoon salt, 1 tsp sesame oil to it.
  3. Once the water starts boiling, put 1 cup of Fusilli pasta.
  4. Let it boil for about 15 mins.
  5. Once it’s boiled, strainthe water and keep the pasta aside.
  6. For the dressing, add the mayonnaise, sesame oil, mixedherbs, black pepper, salt, garlic powder, sugar, and lemonjuice to a bowl and give it a good mix until all the ingredients are mixed well together.
  7. If you need a fluid-like consistency, add little water to it.
  8. Add all the veggies in a big bowl along with the boiled chickpeas.
  9. Pour the entire dressing on the veggies and add the boiled pasta as well.
  10. Give a good mix to the salad with the dressing.
  11. Italian salad will be ready to serve.
