INGREDIENTS Serving : serves 1-2

For the tortilla:

  • Quinoa beetroot flour- 1 cup
  • Olive oil– 1 tbsp
  • Salt- ¼ tbsp
  • Water- As per required

For the stuffing:

  • Chopped capsicum- 3 tbsp
  • Chopped onion- 3 tbsp
  • Crated carrots- 3 tbsp
  • Minced garlic- 1 tbsp
  • Sprouted green moong- 3 tbsp
  • Paneer cubes- ½ cup
  • Cabbage leaves-3-4
  • Salt- As per taste
  • Sliced cucumbers and carrots
  • Basil Pesto- As Per Requirement


While making the tortillas, keep it thick from the corners to prevent it from breaking.


How to Make Quinoa Beetroot

  1. Knead the dough using quinoa beetroot flour, oil, salt, and water.
  2. Make round chapatis (tortillas) using the dough.
  3. Grill or Roast the tortillas slightly with a splash of olive oil and keep it aside.
  4. Blanch the cabbage leaves to retain their freshness, crispness, and color for the burrito.
  5. Saute minced garlic and chopped veggies in olive oil.
  6. Now add paneer and saute it with salt and pepper.
  7. Once your stuffing and tortilla are ready, start plating.
  8. Place the tortilla and smear it with some basil pesto sauce.
  9. Place the blanched cabbage leaf on the tortilla.
  10. Put 2 to 3 tbsp of stuffing in the center.
  11. Put some freshly cut cucumber and carrots and roll it.
  12. Wrap the burrito with parchment paper and serve it.
