  2. Garlic – 4 – 5 Cloves (Chopped)
  3. Onion – 1 Large Size (Chopped)
  4. Tomato – 1 Large size (Chopped)
  5. Quinoa – 1 ½ Cup (Cooked)
  6. Corn – 1 Cup (frozen)
  7. Kidney Beans – 1 Cup (Boiled)
  8. Cumin Powder – 1 Tablespoon
  9. Red Chilly Powder – ½ Tablespoon
  10. Rock Salt – As per taste
  11. Chilly Flakes – 1 Teaspoon
  12. Oregano – 1 Teaspoon
  13. Walnut – 1 Tablespoon
  14. Cheese – As per your liking

How to cook Quinoa

  1. Take one cup of Quinoa and add 2 cups of water to it. And cook it until it absorbs all the water, then remove the pot from heat. Now, cover the Quinoa and let it steam goer 5 minutes.

Now, The Recipe

  1. Cut the bell pepper into half and remove the seeds from it; Wash it and blanch it for 2 minutes.
  2. Put the sliced bell pepper on a greased tray and bake it for 15 minutes, then put it aside.
  3. Heat a pan on a low flame, put oil in it and allow it to get heated.
  4. Now put garlic and onion into it and stir it till it softens.
  5. Add tomato to it and stir it for 2 minutes.
  6. Put black Quinoa, corn, and kidney beans into the pan and fry it for a few minutes.
  7. Add cumin powder, red chilly powder, and rock salt, and let it cook for 2 minutes.
  8. Put chilly flakes, oregano and walnut to it and fry for 30 seconds and let it cool.
  9. Now stuff the mixture in the sliced bell peppers and add cheese on top.
  10. In a pre-heated oven on 375 degrees and bake it for 10 minutes.
  11. After it’s baked, allow it to rest for 5 minutes before surviving
