  • Green Chilli – 1-2 (Chopped)
  • Curry Leaves – 3-4
  • Red Chilly – 3-4 (whole)
  • Ginger – ½ Teaspoon (Grated)
  • Sugar – ½ Teaspoon
  • Curd – 100g
  • Cucumber – ½ (Chopped)
  • Beetroot – 1 small – (Grated)
  • Pomegranate – ¼ Cup
  • Roasted peanuts – 2 Tablespoons

  • Take 1 cup of kolam rice and wash it thoroughly
  • Add 2 ½ cups of water and salt in a pressure cooker and give it three whistles. Keep the rice aside.
  • In a pan, add mustard oil, and allow it to heat
  • Add mustard seeds, cumin seeds and red chilli and wait for 10 seconds
  • Add chopped green chilli, onion, and grated ginger, fry it for 1 minute and keep the seasoning aside.
  • Take a bowl, add curd to it, and make its consistency thin by adding water
  • Add sugar, cucumber, and beetroot and mix all the ingredients well
  • Add cook rice to it and mix it well again
  • Transfer the seasoning to the bowl and mix it well
  • Garnish the curd rice with pomegranate and roasted peanuts.
