Urad dal – 100g
Wheat flour – 1 bowl (medium size bowl)
Refined Flour – 1 bowl (medium size bowl)
Ajwain – 1/2 Tablespoon ajwain
Salt – as per taste
Oil – 6-7 Tablespoons
Water – as per the requirement
Cumin seeds – ½ Tablespoon
Fennel seeds – 1 Teaspoon
Hing – ½ Teaspoon
Green chilly – 1 Tablespoon
Ginger-garlic paste – 1 Tablespoon
Garam masala – 1 Teaspoon
Coriander powder – 1 Teaspoon
Red chilly powder – ½ Teaspoon
Turmeric – ½ Teaspoon
Coriander leaves – 1 stand (chopped)

When there’s some special occasion in the family, kachoris are mandatory to be made. The crispy, fluffy and bust of flavours make it everyone’s favourite. The process of the recipes is important to pay attention to. We have written the step-by-step instruction below to help you make a puffed and crispy kachori.
In a bowl take urad dal, wash it thoroughly and soak it for 2 hours in warm water
After the urad dal is soaked, coarsely grind the dal without adding water to it and keep it aside
In another bowl take wheat flour, refined flour, ajwain, salt, and oil mix all the ingredients well
Now, by adding water make a soft textured dough
Heat a pan, add cumin seeds, hing, green chilly, and ginger-garlic paste and sort the paste for about a minute
Add garam masala, coriander powder, red chilly powder, and turmeric, and sort it a few minutes
Add ground urad dal to the pan, mix everything and cook for 7-8 minutes, salt, coriander leaves
Now keep the mix aside and let it cool for a couple of minutes
Take a small portion of dough and make a hole in it and fill it with urad dal filling and seal it and give it a shape of a ball
With the help of a rolling pin, give the ball a round shape
Now, heat a tawa, place the rolled dough on it and cook it from both the sides
And Grease the kachori with oil, and serve it hot with aloo ki sabzi and green chutney.
